Just place a work station near the babies and when they grow up they will get the job
You have to place down certain blocks next to the villagers to give them jobs like if you want a librarian you place down a lectern next to it.
yea this is just how Minecraft works

There are some that just can´t take on a job, I usualy use them for breeding. But the others will be assigned a job as soon as you place a work station near them. They´ll chose their profession after what workstation you´ve given them. It can take a while for them to recocnize their workstation and to pick up the job, but just be patient and make sure they have access to their workstation.

Yeah just give them a job block. Such as smithing table, grindstone, brewing stand, smoker, blast furnace etc.
Once you breed villagers I believe it takes about 20 minutes for a baby villager to grow. Once it does it can take a job from a free workstation. If your on 1.13 or below then your just getting very unlucky
well i have had a few villagers in rooms with lecterns but they didnt change for like 40mins then once they did, they kept changing professions to things like masons and clerics even though nothing was close
